Yummy No Bake Eclair Cake

Welcome to my specialty dessert that I use for every function and it is certainly a crowd pleaser. This is legit one of my favorite desserts, right on up there with cheesecake if you can believe that. The best thing about this dessert is how easy it is… you’d never know it was this easy by tasting it!

I had this for the first time at a friends birthday party when I was around 12 years old. I raved about it so much, my friends mom gave me the recipe. It was the first recipe that was ever given to me. Little did she know that 12 year old girl would still be making it 20 years later and creating a blog about it!

Ingredients

  • 3 cups milk
  • 2 french vanilla pudding boxes (3.4oz)
  • 2 cool whip containers (8oz)
  • 1 box graham crackers
  • 1 chocolate fudge icing

Cooking Instructions

Mix milk, pudding and cool whip.

In a 9×13 glass dish (you can go a bit bigger if you want but no smaller than a 9×13), layer the bottom with graham crackers. Pour half the pudding mixture on top and spread evenly. On top of that, add another graham cracker layer and pour the rest of the pudding mixture. Spread evenly. On top of that, but another layer of graham crackers.

So you’ll have: crackers, pudding, crackers, pudding, crackers.

Obviously, it doesn’t have to be perfect.
No one will see this… it’s fine.

Microwave chocolate mixture for about 15 seconds and stir. This should not be completely melted but should be… gloopy. This is the only way I know to describe it (such a fancy cooking term). Pour this on top of the graham cracker layer and spread to cover all the graham crackers. If you’re like me and don’t own a microwave, you can put the jar of icing in a small pot of boiling water for about 7 minutes.

See? Gloopy.

Put in fridge overnight and enjoy the next day!
